Instructions

  1. Measure the stew ingredients

Measure the ingredients for 4 portions. Use 600 g raw bone-in beef shank, not the old lamb draft. Keep meat cold and separate from produce; do not wash raw beef.

Beef is cold; ingredients are measured.

  2. Wash produce and divide allowances

Rinse okra before trimming its caps and pat dry. Rinse and chop onions and prepare tomatoes. Divide garlic into 4 + 4 cloves and ghee into 1 + 2 tbsp for the base batch; scale both splits with the ingredient list.

Okra is rinsed and trimmed; fat and garlic are divided.

  3. Build the meat base

Heat the base 1 tbsp ghee over medium heat. Sauté onions and the first 4 garlic cloves until golden. Add beef pieces and sear for about 5 minutes without burning the garlic.

Meat surfaces are seared; aromatics are not burnt.

  4. Simmer beef until nearly tender

Pour in 600 ml boiling water. Bring to a simmer, cover with an ordinary lid and cook gently for about 1 hour until nearly tender. Check regularly and add conditional boiling water only if needed to prevent drying or scorching.

Beef is nearly tender; liquid remains in the pot.

    Beef simmer check: 3600 seconds

  5. Cook the okra and tomatoes

Add 900 g crushed tomatoes, black pepper and prepared okra. Bring to a boil, reduce heat and cover. Simmer about 25 minutes until the okra is tender and the beef is fully tender, then stir in the salt.

Okra and beef are tender throughout.

    Okra stew check: 1500 seconds

  6. Finish with Tasha

Melt the remaining 2 tbsp ghee in a small pan. Sauté the remaining 4 garlic cloves and all the ground coriander for about 2 minutes until fragrant and golden, not burnt. Carefully stir into the hot stew with face and hands away from splashes.

Tasha is aromatic and incorporated without burnt garlic.

    Tasha check: 120 seconds

  7. Verify tenderness and temperature

Probe thick beef pieces away from bones: this master uses at least 71°C plus full tenderness. This is an owner-selected target, not a universal minimum for all whole cuts of beef. Serve 4 hot portions, or 16 from the fourfold batch.

Beef reaches the selected 71°C target and is fully tender.

  8. Chill the meat stew promptly

Divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Use within 24 hours; reheat a portion at most once to 74°C throughout.

Leftovers are shallowly portioned and promptly refrigerated.
