Instructions
Measure the divided allowances
For 4 servings divide 3 tbsp ghee as 1 glaze + 1 vermicelli + 1 rice; at 16 servings use 4 + 4 + 4 tbsp. Divide Bzar 1 + 1 tbsp and salt 1 tsp broth + 0.5 tsp glaze. Bloom 1 pinch saffron in 30 ml rosewater, divided 15 ml glaze + 15 ml rice. Rice receives 1000 ml measured broth + 15 ml infusion = 1015 ml; fourfold 4000 + 60 = 4060 ml.

Prepare cold meat and toppings
Keep lamb cold and do not wash it. Slice onions and prepare garlic. Rinse and soak rice according to its packet, drain and discard soaking water. Use 100 g cooked drained chickpeas, 80 g raisins and 2 hard-boiled eggs with firm whites and yolks; keep eggs refrigerated until needed.

Start the lamb broth
Bring 1500 ml water to a boil in a suitably sized heavy pot. Carefully add lamb, onions, garlic, 1 tbsp Bzar and 1 tsp salt. Return to a simmer over medium heat and skim surface foam with a clean spoon.

Simmer and verify lamb
Cover with an ordinary non-airtight lid and simmer on low heat for about 90 minutes. Check several thick pieces away from bone to the owner-selected 74°C target and fork tenderness; continue if needed. Preheat the oven to 200°C near the end. Transfer cooked lamb directly to the roasting tray; keep broth hot.

Glaze and roast cooked lamb
Mix reserved 1 tbsp ghee, 1 tbsp Bzar, 0.5 tsp salt and 15 ml saffron infusion. Brush over cooked lamb and roast in the preheated 200°C oven for about 15 minutes until browned. Keep cooked lamb hot at 60°C or above if rice is not yet ready; do not leave it lukewarm on the counter.

Toast vermicelli and steam rice
Toast 120 g vermicelli in reserved 1 tbsp ghee over medium heat until golden. Strain lamb broth and measure exactly 1000 ml, topping up only to that target with boiling water if short. Bring measured broth to a boil; add drained rice and toasted vermicelli. Cook until liquid is at grain level. Add the remaining 15 ml saffron infusion, final 1 tbsp ghee, chickpeas and raisins. Cover and steam on low heat about 20 minutes, until rice and noodles are fully tender and toppings hot.

Check the complete dish
Rice and vermicelli must have no hard centres; lamb must be tender and fully cooked to the chosen 74°C target. If extra cooking is needed, keep the cooked lamb safely hot while finishing the grains. Halve the firm hard-boiled eggs with clean tools immediately before serving.

Assemble and serve promptly
Arrange hot rice, vermicelli, chickpeas and raisins on a clean platter. Top with roasted lamb and the halved hard-boiled eggs. Serve promptly and warn diners about bones.

Cool rice, lamb and eggs promptly
Promptly divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Do not wait for a deep pot to cool to room temperature. Use within 24 hours. These are conservative owner-selected household limits, not validated shelf life.

Tips
- Amounts and divided allowances in the instructions describe the base batch. Scale them with the ingredients, not the timer durations. Use appropriately sized pots or several comparable batches for a larger yield.
Common mistakes
- Do not use a timer, colour or aroma alone as proof of readiness; follow the stated texture and temperature checks.
Substitutions
- Use cooked drained chickpeas, not yellow split peas or dry chickpea weight. Check vermicelli for wheat/egg allergens; ghee contains milk. No old almond garnish is added.
Storage

Reheating
Reheat at most once to 74°C throughout, checking several centres including rice, bread or pastry where present. Reheating does not repair unsafe storage.
