Preparation: 15 min · Cooking: 45 min · Total: 1 hr 15 min · 8 servings
Ingredients
- 100 g pure cornstarch
- 400 g granulated sugar
- 700 ml cold drinking water
- 100 ml food-grade rosewater
- 1 tsp saffron threads
- 1.5 tsp ground cardamom
- 35 g ghee
- 50 g toasted slivered almonds and walnuts, combined — Half in the halwa, half as garnish.
- drops of food-grade red or green colouring, optional — 2 (optional) — Up to 3 drops at base yield, 12 at fourfold, within the product dosing directions.
Instructions
Make the cold starch slurry
For one dish, about 8 portions, whisk 100 g cornstarch with 700 ml cold water, 100 ml food-grade rosewater and 1 tsp saffron until smooth. Add optional food colouring within its label directions. At fourfold prepare four dishes / 32 portions. Do not taste the raw slurry.

Melt sugar to light amber
Put 400 g sugar in a deep heavy pot over medium heat. Melt to smooth light-amber caramel, watching closely to avoid burning. Have the re-whisked slurry and a long-handled utensil ready before the next phase.

Add slurry cautiously and thicken
Take the caramel pot off heat. With hands and face away, add slurry slowly in small increments using the long utensil; expect spluttering and steam. Return to low heat and stir continuously for about 20 minutes until hardened caramel dissolves and the starch forms a thick, smooth, sticky mass. Follow starch cooking directions and continue as needed.

Add ghee, cardamom and half the nuts
Stir in 35 g ghee, 1.5 tsp cardamom and half the 50 g combined toasted almonds/walnuts. Stir on low heat for about 15 minutes until glossy, smooth and pulling from the pot walls, with fully cooked starch and no raw powdery texture. The specific 35 g ghee table governs, not the conflicting generic ratio.

Pour and garnish
Pour carefully into shallow heatproof serving dishes and garnish with the remaining half of the nuts. The hot paste can burn; handle with dry heatproof grips. Serve after it has cooled enough to eat, without leaving the batch on the counter for storage.

Refrigerate, not room-temperature storage
Promptly divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Do not wait for a deep pot to cool to room temperature. Use within 2 days. These are conservative owner-selected household limits, not validated shelf life.

Tips
- Amounts and divided allowances in the instructions describe the base batch. Scale them with the ingredients, not the timer durations. Use appropriately sized pots or several comparable batches for a larger yield.
Common mistakes
- Do not use a timer, colour or aroma alone as proof of readiness; follow the stated texture and temperature checks.
Substitutions
- Use only food-grade rosewater and colouring. Colour is optional; nuts contain allergens and ghee contains milk. No unverified room-temperature shelf life is offered.
Storage
Promptly divide leftovers into shallow containers and refrigerate within 1 hour at 4°C or colder. Do not wait for a deep pot to cool to room temperature. Use within 2 days. These are conservative owner-selected household limits, not validated shelf life.
Reheating
Reheat at most once to 74°C throughout, checking several centres including rice, bread or pastry where present. Reheating does not repair unsafe storage.
