Australian Meat Pie

Ingredients
- 500 g lean ground beef — Keep refrigerated; ground beef must reach 71°C.
- 500 g ready-rolled shortcrust and puff pastry — About 250 g each; contains wheat and may contain milk.
- 150 g yellow onion — Finely diced.
- 30 g tomato paste — Concentrated tomato paste.
- 0.5 tsp ground black pepper — Ground.
- 15 ml neutral cooking oil — Such as sunflower or rapeseed oil.
- 25 g all-purpose flour — Contains wheat.
- 350 ml beef stock — Use low-salt stock if possible.
- 15 ml Worcestershire sauce — Check label for fish, gluten and other allergens.
- 1 egg — Beaten with 1 tsp water; egg allergen.
- 3 g fine salt — Adjust after tasting the cooked filling.
- 80 ml Australian-style tomato sauce (optional) — Optional, for serving.
Instructions
Prepare safely and preheat the oven
Heat the oven to 200°C conventional or 180°C fan. Place four 10 cm pie tins on a baking sheet. Finely dice the onion, beat the egg with 1 teaspoon water, and keep both pastry sheets refrigerated until needed. Keep raw ground beef and its utensils separate from ready-to-eat pastry and sauce; wash hands and work surfaces after handling it.
Cook the minced-beef filling
Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 4 minutes until soft. Add the ground beef and cook for 6–8 minutes, breaking it into small crumbs, until no pink remains and it reaches 71°C. Stir in tomato paste, Worcestershire sauce, salt and pepper for 1 minute. Do not drain raw-beef juices into the sink; cook them into the filling.
Thicken and cool the filling
Sprinkle the flour over the cooked beef and stir for 1 minute. Add the stock gradually while stirring, then simmer uncovered for 8–10 minutes until the gravy is thick and a spoon dragged across the pan leaves a clear trail for 2 seconds. Transfer the filling to a wide clean dish and cool for about 20 minutes until no longer steaming; do not fill pastry with hot gravy because it makes the base soggy.
Assemble the four pies
Cut four shortcrust circles large enough to line the tins with a 1 cm overhang and four puff-pastry circles for lids. Line the tins, pressing gently into the corners without stretching. Divide the cooled filling evenly, keeping it below the rim. Brush the pastry edges with beaten egg, add the lids, press and crimp to seal, trim excess, cut a small steam slit in each lid and brush the tops with egg.

Bake with the retained timer
Put the baking sheet on the middle oven rack and start the retained 26-minute timer. Bake for 26 minutes until the lids are deeply golden, puffed and crisp and the filling is bubbling through the steam slit. Rotate the baking sheet once after about 15 minutes if the oven browns unevenly. Use dry oven gloves and keep clear of hot steam escaping from the slits.
Check doneness and rest the pies
Check the centre of one pie through the steam slit with a clean thermometer: the filling must reach at least 71°C. The pastry base should be firm and browned rather than pale or doughy. If either cue is missing, bake in 3-minute intervals and check again. Rest the pies in their tins for 8 minutes, then loosen the edges carefully; the filling remains very hot.
The filling reaches at least 71°C, gravy is bubbling, puff-pastry lids are deeply golden and crisp, and the shortcrust bases are browned and not doughy.
Serve and store safely
Lift the pies from the tins and serve one per person, with optional Australian-style tomato sauce alongside. Refrigerate leftovers in shallow covered containers within 2 hours and use within 2 days. Reheat once in a 180°C oven until the filling reaches 74°C; avoid repeated reheating and do not reheat in the original metal tin in a microwave.
Tips
- Cooling the thick filling before assembly prevents melted pastry fat and a soggy base.
- Cut the pastry slightly larger than the tins so the lid and base can be sealed without stretching.
Common mistakes
- A thin filling leaks when the pie is cut; simmer until it holds a trail in the pan.
- Overfilling prevents a tight seal and sends gravy onto the baking sheet.
- Pale pastry or filling below 71°C needs more baking even if the timer has ended.
