Instructions

  1. Measure and divide ghee

Measure flour, date molasses, water and spices. Divide ghee equally between stirring in and finishing. Keep optional warm water separate; it is a maximum reserve, not mandatory liquid. Prepare a dry skillet, sieve, deep saucepan and whisk.

  2. Toast the flour gently

Toast the flour in the dry skillet over medium-low heat, stirring continuously, first check after 6 minutes for a light brown nutty aroma. Do not burn it. Discard a scorched batch; sifting burnt lumps is not a safety remedy. Home toasting does not certify flour ready to eat.

  3. Whisk the molasses mixture

Sift the toasted flour into the saucepan. Separately whisk date molasses with the measured warm water. Off heat, gradually whisk this liquid into the flour until no dry lumps remain. Never taste raw flour or the uncooked mixture.

  4. Cook the hydrated flour

Cook over medium heat, whisking and scraping the bottom continuously. First check after 15 minutes for a smooth thick pudding with gentle bubbling. Use optional reserve gradually only if too stiff, never over its cap; follow stricter flour cooking directions.

  5. Add spices and half the ghee

Stir in cardamom, black pepper and HALF the ghee. Reduce to very low heat and cook while stirring from a further 5-minute first check. The hydrated flour must be fully cooked; glossy colour alone does not prove doneness.

  6. Portion and finish

Lift the saucepan off heat safely and spoon the hot pudding into heat-compatible shallow containers. Drizzle the remaining HALF of the measured ghee across the surface. Use long-handled utensils to avoid thick hot splashes.

  7. Check texture and serve

Check a small cooled sample for a fully cooked, smooth flour texture, not raw graininess. Serve a fresh portion warm once safe to eat. Do not add unmeasured saffron or claim the dish restores health after childbirth.

  8. Refrigerate promptly

Refrigerate leftovers promptly in shallow containers, without waiting for complete room-temperature cooling. Keep at 4°C or colder for at most 2 days or an earlier ingredient deadline; if reheating, do it once to 74°C throughout.
