Emirati Pumpkin Aseeda
Warm pumpkin and toasted-wheat pudding with cardamom, saffron and ghee; makes 10 small portions.

Preparation: 20 min · Cooking: 50 min · Total: 1 hr 10 min · 10 servings
Ingredients
- 1000 g peeled, cubed pumpkin
- 200 g whole wheat flour — Use the confirmed weight; do not substitute an unverified cup or dl estimate.
- 2 tbsp ghee (clarified butter) — Divide equally: half in the pudding, half on top.
- 1 tsp ground cardamom
- 250 g sugar
- 900 ml water — Total for the original 10-portion batch, including pumpkin-cooking water; retain that cooking liquid.
- 1 pinch saffron — Soak in the listed rosewater before use.
- 2 tbsp rosewater
Instructions
Measure the master batch
Measure the ingredients for the selected portions. The original batch makes 10 small portions: 1 kg peeled pumpkin, 200 g flour, 250 g sugar and 900 ml water in total. Set out a heavy pot with lid, dry pan, sieve, whisk and wooden spoon. Soak the saffron in the rosewater.
Cook and mash the pumpkin
Put the pumpkin cubes in the pot with a portion of the measured water. Cover and cook over medium heat until completely tender and easy to mash. Add more of the measured water if needed to prevent drying. Keep the cooking liquid and mash the pumpkin smooth.
Toast and sift the flour
Toast the whole wheat flour in a dry pan over low heat, stirring constantly until lightly golden and nutty-smelling. Remove from the heat and sift. If the flour is already roasted, skip this toasting step, but still complete the later cooking.
Dissolve the sugar and add pumpkin
Dissolve the sugar in the remaining measured water over medium heat. Stir in the mashed pumpkin with all its cooking liquid. The original water allowance is 900 ml for the whole recipe, not 900 ml in addition to the pumpkin-cooking water. This version dissolves the sugar without caramelizing it.
Whisk in the flour
Reduce to low heat. Sprinkle the toasted flour gradually into the pumpkin mixture while whisking continuously to prevent lumps. Scrape along the bottom and sides so no dry flour remains.
Simmer gently
Cover and simmer on very low heat for 15–30 minutes. Stir frequently, scraping the bottom and sides to prevent sticking. Begin checking after 15 minutes; continue until the flour is fully cooked and the pudding is thick and smooth. The 30-minute timer is a reminder, not proof of doneness.
The flour is fully cooked, with a thick, smooth pudding and no pockets of dry flour.
Check from 15 minutes; simmer for 15–30 minutes or until fully cooked: 1800 seconds
Add the aromatics and half the ghee
Stir in the cardamom, saffron and its rosewater, and half the measured ghee. For the original 10-portion batch, use 1 tbsp ghee here and reserve 1 tbsp for the top. Mix over low heat until evenly combined.
Serve with the remaining ghee
Spoon the warm aseeda into a serving dish or small bowls and smooth the surface. Melt the remaining half of the ghee gently over low heat and drizzle it over the top. Serve warm, handling the hot, thick pudding carefully.
Tips
- Use grams for flour and sugar and ml for water in all languages. One cup, if referenced, means 240 ml; a cup is not 1 dl.
- The original batch gives 10 small portions. Multiply every ingredient, including aromatics and ghee, by selected portions ÷ 10.
- A half batch (5 portions) uses 500 g pumpkin, 100 g flour, 125 g sugar and 450 ml total water. It uses 1 tbsp total ghee, 0.5 tsp cardamom, 0.5 pinch saffron and 1 tbsp rosewater.
- A double batch (20 portions) uses 2 kg pumpkin, 400 g flour, 500 g sugar and 1,800 ml total water. It uses 4 tbsp total ghee, 2 tsp cardamom, 2 pinches saffron and 4 tbsp rosewater.
- Owner-provided simmering guides are about 15 minutes for a half batch and 30–45 minutes for a double batch. They are estimates, not automatic timer changes; use a suitably sized pot and continue until fully cooked.
- Pumpkin moisture varies. If the pudding becomes too stiff to stir, add a small splash of water and continue cooking gently until smooth.
Common mistakes
- Treating cups as dl or guessing a gram-to-volume conversion changes the proportions.
- Discarding the pumpkin water and adding the full allowance again changes the water accounting.
- Adding flour all at once creates lumps; leaving the covered pot unstirred can scorch the pudding.
- Adding 2 tbsp ghee to the pudding and another 2 tbsp on top would double the confirmed total.
Substitutions
- Plain wheat flour may replace the whole wheat flour at the same confirmed weight; toast if not already roasted and cook fully.
Storage
Refrigerate leftovers in a covered container within 2 hours; use within 3 days.
Reheating
Reheat gently over low heat, stirring with a splash of water if needed, until steaming hot throughout.
