Instructions

  1. Rinse rice and prepare tools

Rinse the rice with its separate rinsing water and drain; discard that water. Keep raw chicken chilled and separate from clean serving tools. Select a compact deep heavy pot and a sturdy hand masher; no bones or skin enter this porridge.

  2. Start the chicken broth

Put chicken, initial cooking water, salt and white pepper in the pot. Bring to a boil, skim with a clean spoon and lower to a gentle simmer with a normal fitted lid. Maintain coverage only with the listed shared hot-water reserve if needed.

  3. Poach and check the chicken

Poach with a first check after 25 minutes. Probe the thickest chicken away from the pot: it must reach 74°C before shredding. Continue if needed; 25 minutes is not a guarantee. Do not wash raw chicken or reuse its raw utensils for cooked meat.

Chicken poaching first check: 1500 seconds

  4. Add rice and simmer

Add the drained rice to the same chicken broth; no extra purchased stock is added. Stir carefully to the bottom, then simmer very gently with the normal lid partly ajar. First check after 45 minutes, scraping and stirring frequently to prevent scorching.

  5. Check tenderness and liquid

The rice must be fully soft and breaking down. Add the optional shared reserve gradually only if needed for coverage or texture, never beyond its cap. Initial water is not a promised final broth yield. If the cap cannot produce tender rice in this vessel, stop and reconcile the method rather than add unlimited water.

  6. Shred and hand-mash

Move the pot safely off direct heat onto stable heatproof support. With clean forks shred the safely cooked chicken, then hand-mash rice and chicken together from a 5-minute first check until a cohesive smooth porridge forms. Use long-handled tools and avoid hot splashes; do not use a high-speed blender.

    Hand-mashing first check: 300 seconds

  7. Finish with measured ghee

Check fully tender rice and cohesive texture, then spoon into shallow serving dishes and drizzle all measured ghee. Serve hot at a comfortable eating temperature. No unmeasured Torshi sauce, cinnamon or black pepper is added.

  8. Cool and store rice safely

Cool leftovers rapidly in shallow portions, ideally within 1 hour, not in the heavy pot. Refrigerate at 4°C or colder for at most 24 hours and reheat only once to 74°C throughout. Unsafe earlier holding cannot be repaired by reheating.

Storage

Cool rice dishes rapidly in shallow portions, ideally within 1 hour; never leave them cooling in the heavy cooking pot. Refrigerate at 4°C or colder for at most 24 hours, or an earlier ingredient deadline. Reheat only once to 74°C throughout; reheating cannot repair earlier unsafe holding.

Reheating

Reheat leftovers only once to 74°C throughout, stirring where practical. Follow earlier component deadlines.
